Poached Egg with roasted portobello, seared tomato, and wilted pea greens

A great lunch or breakfast

  • 3 tbsp Olive oil
  • 1 tbsp Balsamic vinegar
  • 2 tbsp Chopped fresh herbs
  • 1 clove Garlic minced
  • Salt and cracked pepper

Veggies to grill or sear

  • Zuchinnis cut length wise into 6 long pieces
  • portobellos with top skin and stump removed
  • 1 tomato (core removed) and cut in half

Poached egg

  • eggs
  • 1 pot 3/4 full of water with 2 tbsp of white vinegar in water


Marinate veggies

  1. preferably night before prepare marinade ingredients and put into a container with the prepared zucchini and portobellos. let sit over night (if you don't have time then an hour ahead is good enough)

Grill/Sear veggies

  1. Remove veggies from bag and either sear in a pan with hot oil or grill on a BBQ. (if doing in a pan make sure oil is nice and hot before adding. We want to sear them to golden brown and not steam)
  2. Season half tomato on each side with salt and pepper
  3. Heat up dry frying pan to almost smoking hot.
  4. place tomato cut side down into pan firmly. let sit until you can see searing around edges
  5. Remove tomato from pan with spatula very carefully

Poach egg

  1. Bring water/vinegar mixture to a boil then reduce heat to a simmer
  2. Use whisk to get a whirlpool like effect going in your pot
  3. Crack and place egg in middle of whirlpool. cook for 3-4 min to your preferred doneness

Wilted pea Microgreens

  1. Dice garlic and onion
  2. Fry garlic and diced onion in a pan on medium heat. Can use same pan as tomato just add oil and turn heat down to medium
  3. Add Microgreens and fry for 30 sec on high heat
  4. Add a dash of balsamic and salt and pepper
  5. Remove from heat before they start to lose their vibrant colour.


  1. Assemble veggies on plate how you would like. Use photo for reference if you want
  2. Place egg on top and drizzle olive oil and sprinkle salt and cracked pepper over top.
  3. Add a nice slice of toast with either butter or olive oil on it!
  4. Serve!
