1 Cup Cooked Brown rice (warm or cold)
1 Carrot Shredded
¼ Red pepper sliced
1 Handful Bunkergreens
1 cup Sprouts (bean or other) if desired
¼ Any other vegetable that you enjoy raw
½ brick Tofu cut into 4 slices
Dressing
2 ½ cup Nutritional yeast
2 ½ tbsp Maple syrup
1 Clove Garlic chopped roughly
2 tbsp Soy sauce or tamari
¼ cup water
¼ cup Olive oil
Instructions
All of these steps can be done in bulk. At our home we will do up large batches to eat from for the rest of the week. Feel free to triple or quadruple the recipe
Cut up all of your veg as desired
Slice your tofu and salt and pepper it on both sides
add some oil to a frying pan and brown the tofu on both sides. Feel free to use the same pan to warm your rice if you like
Place all dressing ingredients in a blender and blend until smooth. (it gets thick as you let it stand so use it right away or prepare it the night before)
Place rice in bowl and cover in veggies and top with tofu then add as much dressing as you desire
